Recipe for In-Tents Winter Warmer

E.S.B. - Medfield

  • Grains:
    1/2 lb Dingmans Special B
    1/2 lb Dingmans Biscuit
    1/2 lb Dingmans Pale Ale

  • Extract:
    6 lbs Gold Malt Syrup
    6 lbs Dark Malt Syrup
    1 lb Dark DME

  • Additional Ingredients:
    1 lb Honey (at Boil)
    1/2 lb Dark Brown Sugar (at Boil)
    2 Cinnamon sticks, broken (B+40)
    1 oz Oak Chips (B+40)
    1 tsp Whole Cloves (B+40)
    1/4 tsp Ginger (B+30)
    1 tsp Orange Peel (B+30)

  • Hops:
    1 oz Target (at Boil)
    1 oz Cascade (B+30)
    1 oz Willamette (B+55)
    1 oz Fuggle (B+59)

  • Yeast:
    1 Wyeast American Ale
    1 Dry Champagne Yeast (thank you Bryan)

    Fermentation Schedule:
    Brewed and primary - 08/28/04
    Secondary and Bottled - September 2004


    Label Notes:
    I have to credit Mike McMillion with first telling me the In-Tents joke: "Did you hear about the circus? It was In Tents!" Anyways, I wanted to make an Intense holiday beer, so I started with a Barleywine recipe and just started adding (as you can see from the additional ingredients). I found those wintery tents online, then added candycanes and a polar bear. I finished the label with another holiday symbol, Dan Coe and I's annual roles as Santa and Kelfin at the department holiday party. I like this label. The beer was in fact Intense, very complex and getting better with age.
