    1 lb Simpson's Caramalt
    1/2 lb Dingman's Pale Ale

  • Extract:
    9.3 lbs Gold Malt Syrup
    1 lb Munton's Extra Light DME

  • Additional Ingredients: None

  • Hops:
    1 oz Nugget (at Boil)
    1 oz Fuggle (B+30)
    1/4 cup Cascade (B+40)
    1 oz Kent Goldings (B+50)
    1 oz Willamette (B+55)
    1 oz Fuggle (B+59)
    1/4 cup Cascade (before closing Primary Fermenter)
    1/4 cup Cascade (after transfer to secondary)

  • Yeast:
    1 Wyeast 1275 Thames Valley
    1 WhiteLabs Edinburgh Ale

    Fermentation Schedule:
    Brewed and Primary - 12/19/04
    Secondary - 01/06/05
    Bottled - 01/14/05


    Label Notes:
    This beer's namesake, Bongo, was an adorable Black Lab that Emily and I found in Oriental, NC during the 2004-05 Holiday. He was a stray, and it looked like he had been abused, but after taking him in one night and feeding him, he was the nicest, most loyal, most loveable dog ever. We took him to the vet in North Carolina to make sure he had all his shots and was in top shape, then Em and her Dad took him back to Charleston where she found him a home with other dogs and lots of space to roam. This label is dedicated to him. The nautical theme is because a) Em bought him a way-cool collar with a similar pattern, and b) Oriental is sailing town.
